Flying Jacob

The dish, Flying Jacob (Flygande Jakob), was invented by Ove Jacobsson who worked in the air freight industry, hence the name. The recipe was first published in Swedish cooking magazine Allt om mat (Everything about food) in 1976. Source text; Wikipedia.

You need

  • grilled chicken fillets
  • 1 tsp Italian salad spice
  • 4-5 banana
  • 4 dl (400 ml) double Cream
  • 2 dl (200 ml) chilli sauce (ketchup style)
  • 1 dl (100 ml) salted peanuts

Instructions

  • Set oven to 225 degrees Celsius.
  • Slice chickens fillets and put in an oven pan.
  • Sprinkle the salad spice on top.
  • Peel the bananas. Slice them and put on top of the chicken.
  • Whip the cream lightly and mix with the chilli sauce.
  • Distribute cream and chilli mix over the chicken and the bananas and bake in oven about 20 minutes.
  • Meanwhile, cut bacon to small pieces and fry until crispy.
  • Spread crispy bacon and peanuts over the baked chicken.
  • Serve with boiled rice and a salad.
  • Enjoy!
