Pancakes baked in muffin tins

Converter & Cheat sheet

You need…

  • 2 dl wheat flour
  • 2 tbsp granulated sugar
  • 0.5 tsp baking powder
  • 1 pinch salt
  • 1 tsp vanilla sugar
  • 4 dl milk
  • 3 eggs
  • melted butter for the tin

How to do…

  • Preheat the oven to 225°C
  • Mix flour, sugar, baking powder, salt, and vanilla sugar in a bowl
  • Stir in half the milk and whisk until the batter is smooth and lump-free; then whisk in the remaining milk and the eggs
  • Grease the muffin tin with melted butter and fill the cups two-thirds full with the batter
  • Bake in the middle of the oven for 12–15 minutes, until the pancakes are golden brown and look like puffed-up eggs They will deflate once removed from the oven
  • Remove and let cool slightly; serve with whipped cream and a tasty jam
