​Fried chicken sandwiches have long been a staple in the American South. However, their commercial breakthrough is often credited to Atlanta restaurateur Truett Cathy. In 1946, he began serving a fried chicken fillet on a bun with pickles, making history.

You need…

The burger

  • Chicken fillet (halved) or thin-cut chicken fillet
  • Salt
  • Black pepper
  • Smoked paprika powder
  • Onion powder
  • Cayenne pepper

Breading

  • Flour
  • 2 beaten eggs
  • 3–4 dl crushed cornflakes

Toppings

  • Lettuce
  • Tomato
  • Red onion
  • Sauce of choice

Bun

  • Brioche or anyone you like

Curry dressing

  • Crème fraîche
  • Mayonnaise
  • Curry powder
  • Cayenne pepper
  • Salt
  • A splash of a sweet drink (e.g., juice, orange juice, or Fanta Exotic/Orange)

How to do…

The dressing

I don’t use exact measurements. Go by feel and taste as you go. Let it sit, then taste again before serving (the curry flavour develops and intensifies after a while)

The burger

  • Pound the chicken fillet until thin
  • season both sides, and coat in flour, egg, and finally the cornflakes
  • Place the chicken in the air fryer, brush with a little oil and cook at 200°C for 5 minutes, flip the chicken, brush with a little oil, and cook for another 5 minutes

Finalizing…

  • Place everything in the bun and eat
