Pancakes baked in muffin tins

You need…
- 2 dl wheat flour
- 2 tbsp granulated sugar
- 0.5 tsp baking powder
- 1 pinch salt
- 1 tsp vanilla sugar
- 4 dl milk
- 3 eggs
- melted butter for the tin
How to do…
- Preheat the oven to 225°C
- Mix flour, sugar, baking powder, salt, and vanilla sugar in a bowl
- Stir in half the milk and whisk until the batter is smooth and lump-free; then whisk in the remaining milk and the eggs
- Grease the muffin tin with melted butter and fill the cups two-thirds full with the batter
- Bake in the middle of the oven for 12–15 minutes, until the pancakes are golden brown and look like puffed-up eggs They will deflate once removed from the oven
- Remove and let cool slightly; serve with whipped cream and a tasty jam
